Black Vinegar Chicken

Black Vinegar is reported to have many health benefits and many people in Asian countries like Japan and China consume it as part of their daily diet. It has an intense aroma and flavour and is a widely used condiment in Asian cuisine. This is a simple recipe where the chicken is braised with ginger, garlic, onions and black vinegar bringing the flavour to another level – simply delicious. Black Vinegar Chicken

  • 3 Tbsp minced garlic
  • 3 Tbsp finely chopped ginger
  • 2 finely chopped large onion
  • 250 ml water
  • 2 Tbsp chopped spring onions
  • 5 chicken legs
  • 1 chicken breast
  • 2 Tbsp thick dark soya sauce
  • 4 Tbsp black vinegar
  • 1 Tbsp light soya sauce
  • ½ Tbsp taucheo fermented soybean paste
  • 1 tsp sugar
  • 250 ml water
  • 1 tsp sesame oil
  1. Wash and cut 5 chicken legs and 1 chicken breast into small pieces
  2. Add 3 Tbsp minced garlic and 3 Tbsp finely chopped ginger in a wok and stir well
  3. Add 2 finely chopped large onion and stir well
  4. Gradually add 200 ml water and mix well
  5. Add 2 Tbsp chopped spring onions
  6. Add the chicken pieces and mix thoroughly
  7. Add 2 Tbsp thick dark soya sauce, 4 Tbsp black vinegar, 1 Tbsp light soya sauce, ½ Tbsp taucheo
  8. Add 1 tsp sugar and mix everything well
  9. Pour another 250 ml of water and mix well
  10. Finally add 1 tsp sesame oil, mix well and let it simmer until chicken is fully cooked
