Double Cheese Cookies

I have always love the combined flavours of Parmesan and Cheddar Cheese. They complement each other so well and if you love these two cheeses then you must definitely try this recipe.

Double Cheese Cookies

Ingredients
- 500 g self-raising flour
- 150 g grated cheddar cheese
- 150 g grated parmesan cheese
- 300 g unsalted butter
Instructions

Weigh 500g self-raising flour in a bowl

Add a mixture of grated cheddar and parmesan cheese to the flour

Using a wooden spoon mix well until all the cheese is coated with the flour

Add the unsalted butter

Rub butter into the flour with fingertips

Gather the mixture together to form a dough

Divide dough into 2 portions

Put dough into plastic bags and chill them in the fridge

Remove chilled dough from the fridge and roll in between 2 pieces of baking paper

Use a cookie cutter to cut shapes from the rolled out dough

Arrange cut-out dough on a baking tray

Bake at 190C around 15 - 20 mins or until golden brown
