Gingerbread Man Cookies

If you’re like me who prefer soft cookies to those hard ones, then you must try this recipe which has a soft texture and a wonderful flavour of spices.

For the new bakers who want to try something simple to bake. You can omit the icing and just cut with any cookie shape cutter and you will have yummy gingerbread cookies for your tea time.

Gingerbread Man Cookies
Course: Snack

  • 1 tsp baking soda
  • 400 g plain flour
  • 1 Tbsp ground ginger
  • 1.5 tsp cinnamon powder
  • 1/4 tsp ground nutmeg
  • 1 tsp salt
  • 130 g butter
  • 100 g brown sugar
  • 1.5 tsp vanilla extract
  • 1 egg yolk
  • 125 g golden syrup
Ingredients for Icing
  • 1 cup of icing sugar
  • 3 tsp milk
  • 1.5 tsp golden syrup
  1. Add baking soda to plain flour
  2. Add ground ginger and cinnamon powder
  3. Add ground nutmeg and salt
  4. Mix all the dry ingredients well
  5. Add butter to brown sugar and mix until light and creamy
  6. Add vanilla extract and egg yolk to mixture
  7. Add golden syrup to batter and mix well
  8. Add the flour mixture a little at a time
  9. Mix until all come together
  10. Store dough in plastic bags and
  11. keep in the fridge for at least 1 hour
  12. Remove chilled dough from fridge and
  13. place in between 2 baking papers
  14. Roll dough flat about 1/2 cm thick
  15. Cut dough with a ginger bread man cutter
  16. Arrange cut dough on a baking tray
  17. Bake at 180C until edges turn slightly brown (10 – 15 mins)
Preparation for Icing
  1. Sieve 1 cup of icing sugar into a bowl
  2. Add milk and golden syrup
  3. Stir and mix well
  4. Scoop some icing mixture into a piping bag
  5. Pipe icing over gingerbread man for decoration
