Kueh Bingka Ubi with Gula Melaka

Another favourite kueh among the Peranakan (Nyonya). A slightly crispy crusted Kueh Bingka with gula melaka.

There are 2 versions of this kueh, one with grated coconut for an added texture and the other without. But both with that unique flavour of gula melaka.

Kueh Bingka with Gula Melaka

  • 250 g raw sugar
  • 5 eggs
  • 400 ml coconut milk
  • 0.5 tsp salt
  • 1.5 tbsp vanilla extract
  • 1.5 kg grated tapioca
  • 1.5 tbsp softened butter
  • 60 g grated gula melaka
  • 60 g grated coconut optional
  • 60 g grated gula melaka for toppings

  1. Add raw sugar to eggs in a mixing bowl
  2. Beat the eggs and sugar until well mixed
  3. Add coconut milk
  4. Add salt and vanilla extract to mixture
  5. In another bowl of grated tapioca, add the above egg and sugar mixture
  6. Slowly mix all ingredients together until evenly distributed
  7. Add softened butter and ensure it is mixed well into mixture
  8. Add the grated gula melaka and coconut (optional)
  9. Line a baking tray with banana leaf and pour in the tapioca mixture
  10. Sprinkle the grated gula melaka for toppings all over the surface
  11. Bake at 160°C for 1 to 1.5 hours until top surface is crispy brown
  12. Let it cool down for 30 mins before cutting
  13. Oil the knife before cutting
